Economic, social and environmental sustainability, cooperation, rural life and Nature are our goals.
Our view is that our cooperative must go beyond its strict legal definition. For that reason we work together in the decision making process of all matters and the management of the olive groves. We meet regularly to analyze the evolution of the farms and make proposals to improve and resolve the challenges that any member may be facing.
One of our priorities is Research and Investigation which has placed us at the forefront of organic farming. We continuously educate ourselves on biodynamic farming methods and then experiment with the different theories on the ground. We will share some of our most interesting findings and conclusions through our website.
“Science can analyse Dehesa de la Sabina, and say how much of it is monounsaturated fats and how much is polyphenols; but science cannot analyse any man's wish for Dehesa de la Sabina, and say how much of it is hunger, how much custom, how much nervous fancy, how much a haunting love of the beautiful. The man's desire for Dehesa de la Sabina remains literally as mystical and ethereal as his desire for heaven.”
